A healthier, lower oil, vegan take on the classic. A dark roux with peppers, onions, celery, okra, jackfruit, red beans and a few shiitake mushrooms. Classic cajun seasonings. Served with short-grain brown rice. Small desert of gently spiced and sweetened, baked pears with an oat crumble. (Gumbo contains a very small amount of gluten in the roux and soy in the form of tamari.)
